My Favorite Holiday Cookie

We finally arrived at our first holiday destination - Houston.  Hooray!  Now it's time for some eating, drinking, family revelry and overall relaxation.  

And what's the first thing I do when I arrive?  

Grab a cherry wink cookie.  

These are my absolute FAVORITE holiday cookies.  They are delicious and moist and are a family staple of the season.  And by the way, the dough is just as good, if not better, than the cookie itself - oh yea, I was raised in that kind of family.  Recipe below.

From my family to yours, enjoy!

Cherry Winks

1/2 tsp salt

1/4 tsp baking soda

1 1/3 c chopped pecans

Maraschino cherries, drained and halved

Now let's all go get our bake on.

I c shortening

3 oz cream cheese, softened 

1 c granulated sugar

1 egg

1 tsp almond extract

2 1/2 c flour

Preheat oven to 350 degrees.

Cream shortening and cream cheese in your mixer.  Gradually add sugar, beating until light and fluffy.

Add egg and almond extract.  Beat well.

In a separate bowl, combine flour, salt and baking soda.  Gradually stir into shortening mixture.

Chill dough for at least 1 hour (up to 8 hours)

Shape into 1 in balls by hand.  Roll in chopped pecans and place on an uncreased cookie sheet.  Gently press a cherry half into the center of each cookie.

Bake for 16 to 18 minutes..
